Iowa sweet corn & bacon frittata

Ingredients:
8 large eggs
!/2 C. 1/2&1/2
1/2 t. freshly ground black pepper
1/2 t. kosher salt
2 pinches red pepper
1 t. chopped fresh parsley
1/2 cup of fresh corn
6 strips of crispy bacon, crumbled
1/2 C. grated cheddar cheese plus extra 1/4 C. for top
2 T. butter

Pre heat oven to 375 degrees

Method:
Melt  butter in a cast iron skillet.
Whisk the first 6 ingredients together in a large bowl.  Stir the corn, bacon and 1/2 C cheese into the egg mixture and pour into the skillet.  Top with the remaining cheese and bake for 20 Min or til golden brown on top.  Cut into pie shaped wedges.
